Vince's Banana/Avocado Bread

  • 3 Large Bananas
  • 1 Large Avocado
  • 3 Large Eggs
  • 3 Tbs Coconut Oil
  • 1 Tbs Vanilla
  • 6 Tbs Real Maple Syrup
  • 1-1/4 Cup Whole Wheat Flour
  • 1-1/4 Cup Almond Flour if you want gluten free then double
  • 1 Tbs Cinnamon
  • 1-1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • Salt
  • 1 Cup Shredded Coconut
  • Hand Full Crunched Walnuts
  • Hand Full Cranberries
  • Hand Full Chocolate Chips

Instructions
  1. Wet in Blender
    3 Large Bananas
    1 Large Avocado
    3 Large Eggs
    3 Tbs Coconut Oil
    1 Tbs Vanilla
    6 Tbs Real Maple Syrup
  2. Dry in a Bowl
    1-1/4 Cup Whole Wheat Flour
    1-1/4 Cup Almond Flour (if you want gluten free then double)
    1 Tbs Cinnamon
    1-1/2 Tsp Baking Powder
    1/2 Tsp Baking Soda
    Sprinkle of Salt
  3. Mix the dry bowl and add the wet from the blender after blending, clean the blender with 1/4 cup of water and also add to the mix. Hand mix all the ingredients well.
  4. Add in the following:
    1 Cup Shredded Coconut
    Hand Full Crunched Walnuts
    Hand Full Cranberries
    Hand Full Chocolate Chips
  5. Mix well again and fits into 9x5-1/2"x2-1/2" deep pan
    Preheat Oven to 350 F
